Mexican Chicken Livers - cooking recipe

Ingredients
    1 lb. chicken livers
    1/2 c. flour
    1/2 tsp. salt
    1/8 tsp. pepper
    6 Tbsp. butter
    5 scallions, sliced
    1/2 lb. fresh mushrooms, sliced
    1/4 c. sherry (more as desired)
Preparation
    Coat chicken livers with flour mixed with salt and pepper. Melt butter; saute chicken livers until golden brown.
    Add scallions and mushrooms; cook until tender.
    Add desired amount of sherry; simmer for 5 minutes.
    Serve livers on toast or rice. Makes four servings.
