Beef Pot Roast And Vegetables - cooking recipe

Ingredients
    1 (3 lb.) chuck roast
    1/2 tsp. pepper
    4 tsp. salt
    1/4 c. oil
    2 onions, quartered
    6 carrots, scraped and sliced
    6 potatoes, peeled and quartered
    1 c. flour
Preparation
    Roll roast in 1/2 cup flour, pepper and 2 teaspoons salt. Brown roast slowly in hot oil in Dutch oven.
    Reduce heat to 250\u00b0. Add 1/2 cup water and simmer 1 1/2 hours.
    Add water as needed to prevent sticking. Add onions and cook 1/2 hour longer.
    Add carrots and potatoes.
    Simmer until tender. Remove.
