Veal Scaloppine - cooking recipe

Ingredients
    2 lb. thin veal cutlets
    1 1/2 tsp. salt
    1/2 tsp. pepper
    4 oz. sliced mushrooms
    1 (1 lb. 12 oz.) can solid packed tomatoes
    1 (6 oz.) can tomato paste
    1/4 tsp. oregano
    1/4 tsp. basil
    1 clove minced garlic
    1/4 c. chopped green pepper
Preparation
    Pound veal and season with salt and pepper. Brown veal in either olive oil or margarine (2 tablespoons).
    Combine tomatoes, tomato paste, green pepper, mushrooms and seasonings. Stir until tomatoes are broken up.
    Add to veal in skillet. Cover and simmer 30 minutes. Uncover and simmer 30 more minutes.
