Turkey Sausage, Vegetable, Pasta Ragout Casserole - cooking recipe

Ingredients
    2 lb. turkey sausage
    2 Tbsp. olive oil
    2 c. sliced celery, cut on diagonal in 1/2-inch pieces
    2 c. coarsely chopped yellow onions
    1 c. coarsely chopped green bell pepper
    1 c. coarsely chopped yellow or red bell pepper
    2 Tbsp. coarsely chopped garlic
    1 lb. ripe plum tomatoes (each 1 cut into 8 pieces)
    1 1/2 c. prepared Marinara tomato sauce (I use \"Classico\" brand)
    1/2 c. dry white wine
    2 tsp. dried basil
    1 tsp. fennel seed
    salt and freshly ground pepper to taste
    1/4 c. chopped fresh parsley
    cooked rigatoni or mostaccioli pasta
    1 1/2 c. shredded Monterey Jack cheese or Mozzarella cheese
    Parmesan cheese (coarsely grated kind)
Preparation
    Preheat broiler.
    Score the sausages 1/4-inch deep 3 times on each side.
    Broil sausages about 4 inches from heat source until golden brown, 4 to 5 minutes per side.
    Remove from broiler and cut into 1 inch lengths.
    Reserve.
