Sour Beef - cooking recipe

Ingredients
    3 1/2 lb. boneless chuck roast
    1 1/2 pt. vinegar (white)
    1 1/2 pt. water
    2 Tbsp. pickling spices, tied in cheesecloth
    1 large onion, cut up
    salt and pepper to taste
Preparation
    Pour the ingredients over the meat; let come to boil, then cook slowly until meat is tender but not overdone.
    Use heavy pot. Add 1 cup sugar slowly (taste as you add sugar).
    Soak gingersnaps, a little at a time, so they melt using water.
    You will use almost a box of gingersnaps.
    Add to the meat.
    Make as thick as you like, then simmer about an hour, stirring once in a while.
    Take out spices.
    Serve over potato dumplings.
