Lemon Sponge-Cake Pie - cooking recipe

Ingredients
    1 c. sugar
    2 Tbsp. flour
    1/2 tsp. salt
    grated rind and juice of 1 lemon
    2 large eggs
    1 c. milk
    1 Tbsp. butter, melted
    1 pie crust for 9-inch pie
Preparation
    Mix sugar, flour and salt.
    Grate lemon rind; add to flour mixture.
    Set aside.
    Separate eggs; beat yolks.
    To egg yolks, add lemon juice, milk and melted butter.
    Add liquid mixture to dry mixture; mix well.
    Beat egg whites until stiff; fold into above.
    Prepare favorite crust in 9-inch pan.
    Pour in filling; bake at 350\u00b0 for 40 to 45 minutes.
    Yields 8 servings.
