Ingredients

1 (8-inch) graham cracker pie shell
1 (8 oz.) pkg. strawberry gelatin
1 c. very hot water
1 pt. strawberry ice cream
1/2 c. heavy cream
1 Tbsp. confectioners sugar
Preparation

Combine gelatin and hot water in a mixing bowl and stir until gelatin dissolves.
Stir in the pint of ice cream until melted. Beat mixture thoroughly by hand or with electric beater until light and fluffy.
Pour into pie shell.
Cover top with aluminum foil and refrigerate 4 hours. Just before serving, whip the cream with confectioners sugar and spread over pie.
