Roast Potatoes - cooking recipe

Ingredients
    4 medium potatoes
    2 Tbsp. total: basil, thyme and rosemary
    2 tsp. black pepper
    kosher salt to taste
    1 Tbsp. olive oil
    1/4 c. olive oil
Preparation
    Preheat oven to 425\u00b0.
    Coat bottom of cookie sheet with 1 tablespoon olive oil.
    Set aside.
    Wash potatoes but do not peel! Cut in 1/4-inch chunks (steak fry size).
    Mix with remaining ingredients and spread out on a cookie sheet.
    Cook until brown and crisp.
