Marinated Vegetables - cooking recipe
Ingredients

1/3 c. oil
1/3 c. vinegar
2 Tbsp. minced peppers
1 Tbsp. chopped parsley
1/2 tsp. salt
3 c. florets of broccoli and cauliflower
1 1/2 c. cooked kidney or garbanzo beans
2 c. sliced cucumbers
1 c. sliced carrots
Preparation
-
In large bowl, mix first 5 ingredients.
Add next 4 items. Mix gently.
Cover and refrigerate.
Makes nearly 2 quarts.
Use within a week.
