Lemon Chess Pie - cooking recipe

Ingredients
    1 c. sugar
    1 Tbsp. butter, softened
    1/4 tsp. salt
    3 eggs, separated
    1 unbaked (9-inch) pastry shell
    juice and grated rind of 1 lemon
Preparation
    Combine sugar and butter; beat well.
    Add lemon juice and rind, salt and egg yolks; beat well.
    Beat egg whites until light and fluffy; fold into sugar mixture.
    Pour filling into pastry shell.
    Bake at 450\u00b0 for 10 minutes.
    Reduce temperature to 350\u00b0 and bake 30 minutes more.
    Yields a 9-inch pie.
