Arroz Con Pollo(Puerto Rican Chicken) - cooking recipe

Ingredients
    4 1/2 to 5 lb. chicken
    1 1/2 qt. water
    1 tsp. salt
    1 small onion, minced
    1 green pepper, diced
    1 Tbsp. olive oil
    1/2 lb. ham, diced
    1 Tbsp. oil
    1 small jar olives, cut into pieces
    1 large can stewed tomatoes, drained
    1/3 c. olive oil
    2 c. brown rice
    4 c. chicken broth
    peanuts or chutney, or shredded pineapple or coconut (garnish)
Preparation
    Cook chicken in water and salt until chicken is tender. Reserve broth.
    Fry onion and green pepper in 1 tablespoon olive oil until vegetables are cooked.
    Set aside in a large bowl.
    Fry ham in 1 tablespoon oil until all sides are brown.
    Add chicken and ham to bowl with onion and green pepper.
    Add olives and stewed tomatoes.
