Barley Bean Medley - cooking recipe

Ingredients
    1/2 c. chopped onion
    1 Tbsp. butter or margarine
    1/4 c. pearl barley
    1/2 c. dried beans (white, lima or kidney)
    2 c. vegetables
    chicken or beef broth
    1 Tbsp. chopped parsley
    2 strips bacon, cooked crisp and crushed
    1 Tbsp. coriander seed, crushed
    1/2 tsp. salt
Preparation
    Saute onion in butter until tender.
    Add barley and continue sauteing until barley is light brown.
    Add beans, broth, parsley, bacon, coriander and salt.
    Cover.
    Bring to a boil and then reduce heat to a simmer for about 1 hour, adding additional broth or water if necessary or until beans and barley are tender and all moisture is absorbed.
    Serves 4.
