Bacon-Stuffed Potatoes - cooking recipe

Ingredients
    8 large baking potatoes
    1/4 c. butter or margarine
    1 c. commercial sour cream
    1 egg
    1 tsp. salt
    1/8 tsp. pepper
    9 crisp bacon slices, crumbled fine
    paprika
Preparation
    Scrub potatoes and dry. Rub with a little butter or oil and bake directly on oven rack at 400\u00b0 for about 1 hour or until fork-tender. Cut a long oval slice from one side of potato
    and scoop out into a bowl. Add butter, sour cream, egg, salt and pepper. Beat well. Stir in crisp, crumbled bacon.
    Pile back into 6 potato shells, mounding the potatoes high (that's why you baked two extra potatoes).
    Sprinkle with paprika.
    Place on baking sheet and bake at 350\u00b0 for 10 to 15 minutes until heated through. Serves 6.
