Wild Rice With Scallions And Cranberries - cooking recipe

1 1/2 c. pure wild rice
1 medium yellow onion, diced
1 tsp. salt
1/2 tsp. white pepper
1 tsp. minced garlic
3 Tbsp. olive oil
4 c. low-sodium chicken stock
1 c. scallions, sliced to 1/4-inch
1 c. cranberries
1/2 c. toasted, slivered almonds
Preparation

In 3-quart saucepan, heat olive oil. Add onion and garlic. Cook until tender. Add wild rice, salt and pepper; stir.
Add chicken stock; bring to boil. Reduce heat to simmer; cook until rice is tender (30 to 60 minutes). If all liquid is not absorbed but rice is tender, strain off liquid.
