Vegetable Manicotti(Serves 6) - cooking recipe

Ingredients
    15 oz. container nonfat Ricotta cheese
    2 egg whites, slightly beaten
    1/3 c. chopped fresh parsley
    2 Tbsp. Parmesan cheese
    3/4 tsp. Italian seasoning
    1/2 tsp. salt (optional)
    12 manicotti (uncooked)
    2/3 c. sliced zucchini
    2/3 c. sliced yellow squash
    2/3 c. sliced mushrooms
    28 oz. jar low-sodium spaghetti sauce
    1/2 c. dry white wine
Preparation
    Heat oven to 350\u00b0.
    Spray 13 x 9-inch baking dish with Pam. Combine Ricotta, egg whites, Parmesan, Italian seasoning and salt. Fill each manicotti with cheese mixture.
    Top with vegetables. Cover with combined sauce and wine.
    Cover dish with foil and bake 40 minutes or until pasta is tender.
