Sweet Potato Muffins - cooking recipe
Ingredients

1 3/4 c. all-purpose flour
1 Tbsp. baking powder
1 tsp. salt
1 1/4 c. cooked, mashed sweet potatoes
1/4 c. margarine
1 tsp. cinnamon
1/4 c. sugar
1/2 c. chopped pecans
3/4 c. milk
2 eggs, slightly beaten
Preparation

Combine flour, baking powder, salt, potatoes, margarine and cinnamon in a large bowl, stirring well.
Make a well in center of mixture.
Combine remaining ingredients, stirring well; add to first ingredients, mixing just until moistened.
Spoon batter into greased muffin pans, filling two-thirds full.
Bake at 425\u00b0 for 20 to 25 minutes.
Yields about 1 1/3 dozen muffins.
