Yam Soup - cooking recipe

Ingredients
    1 lb. fresh yams
    4 c. water
    2 Tbsp. vegetable oil
    1 c. chopped onion
    2 c. chopped tomato
    2 1/2 c. beef stock
    1 tsp. salt
    1/2 tsp. cayenne pepper
    sprig of parsley
Preparation
    Boil yams in water until tender; remove from heat and drain. Peel immediately under cold running water.
    Place yams in a mixing bowl; mash with a potato masher until smooth.
    Set aside.
