Chicken Livers And Rice - cooking recipe

Ingredients
    3/4 lb. chicken livers
    salt and pepper
    flour
    4 Tbsp. butter or oleo
    3/4 c. chopped onion
    3/4 c. chopped celery
    1 c. rice
    2 c. chicken broth
    1 tsp. minced parsley
Preparation
    Sprinkle livers with salt and pepper to taste; shake in small amount of flour in a paper bag.
    Brown in butter in hot skillet; place in 6 cup casserole.
    Saute onion, celery and rice in remaining butter in skillet until lightly brown.
    Add chicken broth; stir well and add parsley.
    Pour over livers.
    Cover and bake at 350\u00b0 for 30 minutes or until rice is tender and liquid is absorbed.
    Add salt if needed.
    Yields 6 servings.
