Sweet Potato Casserole - cooking recipe

Ingredients
    6 medium-sized sweet potatoes or sufficient to make about 3 c. mashed potatoes
    4 Tbsp. butter, at room temperature
    3/4 c. sugar
    2 eggs, beaten
    1/2 c. milk
    1/4 tsp. vanilla
Preparation
    Preheat oven to 350\u00b0.
    Boil sweet potatoes in water to cover until tender.
    Drain and peel while hot.
    Mash until smooth.
    Add butter, sugar, eggs, milk and vanilla and beat until light and fluffy.
    Transfer to a well-buttered casserole dish.
