Garlic Soup With Greens - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1 garlic bulb, peeled and separated into cloves
    2 onions, chopped
    3 bay leaves
    1 tsp. thyme
    2 tsp. allspice
    3 c. chicken or beef stock
    1 c. milk
    1 c. shredded fresh spinach
Preparation
    In large pot, add oil, garlic, onions, bay leaves, thyme, allspice and stock; bring to a boil.
    Reduce heat and simmer until garlic is tender, about 10 minutes.
    Discard bay leaf.
    Remove onion and garlic to blender with a small amount of stock; blend until smooth.
    Then add garlic and onion mixture to the stock in the pot; heat over low heat while adding milk.
    Stir until hot. Add spinach; stir briefly, then serve.
    (The hot soup will blanch the spinach.)
    Yield: 4 servings.
