Perfect Prime Rib - cooking recipe

Ingredients
    5 lb. prime rib
    salt and pepper to taste
Preparation
    Have meat at room temperature.
    Preheat oven to 375\u00b0.
    Season meat.
    Cook meat 1 hour.
    Turn oven off.
    Do not open door.
    Leave off at least 40 minutes (can leave off hours).
    Turn on and cook 40 minutes before you want to serve.
    Use for 5 pounds or more.
    For less than 5 pounds, cook only 30 minutes at end.
    For 5 pounds rare, I do 30 minutes.
