Eggplant Fritters - cooking recipe

Ingredients
    1 medium to large eggplant
    2 eggs, beaten
    1 medium onion, chopped
    1 tsp. baking powder
    salt to taste
    flour
Preparation
    Cook eggplant in boiling water until tender.
    Drain.
    Add onion, baking powder, salt, eggs and enough flour to make a batter stiff enough to drop by tablespoons into hot oil.
    Cook until golden brown, turning just once.
    Drain on paper towels.
