Tuna Stuffed Potatoes - cooking recipe
Ingredients

4 large baked potatoes
1/2 c. hot milk
2 green onions, minced
1 egg
2 Tbsp. butter
1 tsp. salt
dash of cayenne pepper
1 medium tomato, diced
1 (7 1/2 oz.) can tuna, drained
2 Tbsp. grated Parmesan cheese
parsley for garnish
lemon slices for garnish
Preparation

Preheat oven to 400\u00b0.
Cut a thin slice from one side of each potato, scoop out the interior.
Place in bowl.
Mash, adding the hot milk.
Whip until fluffy.
Add green onions, egg and butter, whipping mixture well.
Season with salt and cayenne pepper.
Fold in tomato and tuna.
Pile this mixture into potato skins, mounding 1 teaspoon high.
Sprinkle with Parmesan cheese.
Place into baking pan.
Bake at 400\u00b0 for 10 minutes until potatoes are heated. Yields 4 servings.
