Green Tomato Pickles - cooking recipe

Ingredients
    7 lb. green tomatoes
    5 lb. sugar
    1 1/2 c. lime in 1 gal. water
    1 1/2 qt. apple vinegar
    1 Tbsp. mustard
    1 Tbsp. celery seed
    1 Tbsp. pickling spices (tie in a bag)
Preparation
    Slice tomatoes (not too thin).
    Soak overnight in lime water. Make sure tomatoes are covered with water.
    Drain and wash very carefully.
    Soak 5 hours in cold water, changing every 1/2 hour. Make syrup of sugar, vinegar and spices.
    Bring to rolling boil and add tomatoes.
    Let stand 12 hours in syrup.
    Bring syrup and tomatoes to rolling boil and simmer slowly for 1 hour.
    Pack in hot jars and seal.
