Creole Chicken - cooking recipe
Ingredients

2 lb. deboned cooked chicken, cut up
2 c. chopped onions
1 c. celery
1 medium size green pepper
1 stick butter
1 1/2 c. tomato sauce
1 tsp. cayenne pepper
1 tsp. basil
1 c. peeled and chopped tomatoes
salt and pepper to taste
Preparation

In a large 3-quart pot, melt butter and saute vegetables.
Add tomato sauce, tomatoes and seasonings.
Let simmer for 15 minutes.
Then add chicken and let simmer another 10 minutes. Serve over a bed of rice.
