Live-Longer Casserole - cooking recipe

Ingredients
    1 onion, chopped
    1 c. sliced fresh mushrooms
    1 Tbsp. low-fat margarine
    2 pkg. frozen spinach, thawed or 3 c. chopped fresh spinach
    1 1/2 c. chopped tomatoes
    1 3/4 c. diced zucchini
    1 1/2 tsp. salt (optional)
    1/2 lb. spaghetti, broken in half
    1 tsp. nonstick cooking spray
    3 oz. reduced fat Swiss cheese
    3 oz. reduced fat Cheddar cheese
Preparation
    In a large skillet over medium heat, saute onion and mushrooms in margarine.
    In a medium bowl mix together spinach, tomatoes, zucchini and salt (optional); add to onion-mushroom mixture. Simmer 5 minutes.
    Cook spaghetti 15 minutes in boiling water, drain and add to vegetable mixture.
    Spray 9 x 13-inch casserole with cooking spray; pour vegetable mixture into casserole.
    Mix cheeses together and sprinkle on top.
    Bake at 350\u00b0 for 30 minutes. Serve hot.
