Vidalia Onion Relish - cooking recipe

Ingredients
    1 1/2 gal. ground Vidalia onions (about 20 lb.)
    1/2 c. salt, divided
    4 tsp. pickling spice, placed in cheesecloth
    1 qt. apple cider vinegar
    4 1/2 c. sugar
    1 tsp. turmeric
    4 Tbsp. pimento, chopped
Preparation
    Grind enough onions to yield 1 1/2 gallons.
    Add 1/4 cup of the salt and let stand 30 minutes.
    Squeeze juice from onion-salt mixture and discard.
