Delmarva Chicken - cooking recipe
Ingredients

6 lb. frying chicken
1 1/2 c. Parmesan cheese
1/2 c. grated onion
1/2 tsp. pepper
2 c. crushed crackers, chopped
1/4 c. fresh parsley
1 Tbsp. salt
2 sticks 3 Tbsp. butter
Preparation

Preheat oven to 375\u00b0.
Rinse and dry chicken.
Roll crackers until crushed; combine grated onion, chopped parsley, Parmesan, salt and pepper in bowl, blending well.
Melt butter.
Dip chicken in cracker mixture.
Place chicken on aluminum foil covered baking tray.
Sprinkle onion, parsley and cheese mixture onto chicken. Pour melted butter over all pieces.
Cover chicken for 40 minutes; then remove.
Cook, uncovered, for another 25 minutes until tender.
