Pickled Garden Relish - cooking recipe

Ingredients
    1/2 small head cauliflower, cut in flowerets and sliced
    2 carrots, pared and cut in 2-inch strips
    2 stalks celery, cut in 2-inch pieces (1 c.)
    1 green pepper, cut in 2-inch strips
    1 (4 oz.) jar pimiento, drained and cut in strips
    1 (3 oz.) jar pitted green olives, drained
    3/4 c. wine vinegar
    1/2 c. salad oil/olive oil
    2 Tbsp. sugar
    1 tsp. salt
    1/2 tsp. dried oregano
    1/4 tsp. pepper
Preparation
    In a 1 gallon glass jar or 4 quart jars, layer sliced cucumbers and onions, 1 inch each layer.
    Repeat until just below mouth of jar.
