Fruited Tofu - cooking recipe

Ingredients
    1/4 lb. tofu, drained
    1 medium banana
    1/2 c. pineapple (fresh cut)
    1 medium banana, sliced
    1 c. papaya, cubed in 1-inch pieces
    1 1/2 c. pineapple, cubed in 1-inch pieces
Preparation
    Combine first 3 ingredients in blender or food processor and process smooth for sauce.
    Place remaining ingredients in a bowl and toss with tofu sauce.
    Serve in sherbet or parfait cups garnished with a piece of the fruit and mint leaves.
    Makes 6 servings, 75 calories per serving.
