My Barrister'S Favorite Carrot Cake - cooking recipe
Ingredients

1 1/2 c. oil
3 eggs
2 c. all-purpose flour
2 tsp. baking soda
1 (7 oz.) pkg. flaked coconut
1 (13 to 14 oz.) can crushed pineapple, drained
2 c. sugar
2 tsp. vanilla
2 tsp. cinnamon
1 tsp. salt
2 c. shredded carrots
1 c. chopped nuts
Preparation

In large bowl, combine oil, sugar, eggs and vanilla.
In separate bowl, sift flour, cinnamon, baking soda and salt.
Add flour mixture to oil-sugar-eggs-vanilla mixture and blend well. Stir in coconut, carrots, pineapple and nuts.
Pour into greased/floured 13 x 9 x 2-inch pan.
Bake at 350\u00b0 for 50 to 60 minutes until center of cake is firm to the touch.
Cool in pan. Frost with cream cheese frosting.
