Creole Meat Loaf - cooking recipe

Ingredients
    1 1/2 lb. lean ground beef
    1/2 c. each: cooked rice, chopped onion and bell pepper
    1 tsp. salt
    1/2 to 1 tsp. thyme
    1 egg
    2 (8 oz.) cans tomato sauce
    1 Tbsp. cooking oil
    1/2 c. chopped celery
    2 Tbsp. finely chopped parsley (can use dried)
Preparation
    Preheat oven to 350\u00b0.
    Mix ground beef, rice, onion, bell pepper, salt, thyme and egg.
    Add 1/2 can tomato sauce.
    Blend. Shape into loaf.
    Bake 1 hour.
    Pour off fat.
    Meanwhile, heat oil and cook celery until tender.
    Add remaining 1 1/2 cans tomato sauce.
    Add parsley.
    Simmer over low heat while baking meat loaf. After pouring off fat, top loaf with sauce.
    Return to oven and bake for 10 minutes.
    Serves six.
