Graham Zucchini Muffins - cooking recipe

Ingredients
    2 large eggs
    2 c. sugar (1 white, 1 brown)
    1 c. cooking oil
    1 Tbsp. vanilla extract
    2 c. unpeeled grated zucchini
    1 Tbsp. grated orange rind or dash of orange extract
    2 1/2 c. flour (1 white, 1 1/2 graham)
    1 Tbsp. cinnamon
    2 tsp. baking soda
    1 tsp. salt
    1 tsp. baking powder
    1 c. nutmeats (optional)
Preparation
    Beat eggs until frothy; fold in sugar, oil and vanilla.
    Stir in grated zucchini and orange rind; mix well.
    Sift dry ingredients together and add to creamed mixture in thirds, blending only until well mixed.
    Overbeating makes muffins tough. Spoon into papered muffin tins or small loaf pans.
    Bake at 350\u00b0 for about 20 minutes for muffins and 40 minutes for loaf.
