Baked Eggplant - cooking recipe
Ingredients

1 large eggplant
1/2 lb. bread crumbs
1 c. milk
2 eggs
1/2 tsp. sage
salt and pepper
1 green pepper, chopped
2 stalks celery, chopped
1 large onion
1 small jalapeno
1/2 cube butter
Preparation

Peel and slice the eggplant. Soak in salted water in refrigerator several hours or overnight. Soak bread crumbs in milk. Add eggs, sage, salt and pepper. Saut green pepper, celery, onion and jalapeno in butter until tender. Boil eggplant (large cubes) until almost tender; drain. Add bread mixture and sauteed vegetables; blend. Place in greased casserole. Top with grated cheese. Bake at 350\u00b0 until brown.
