Zucchini Casserole - cooking recipe
Ingredients

2 c. grated zucchini
1 c. grated carrot
1 onion, chopped fine
1 bell pepper, chopped fine
1 c. sour cream
1 can cream of chicken soup
1 stick butter or margarine
1 pkg. herbed stuffing mix
Preparation

Preheat oven to 375\u00b0.
Pour melted butter over stuffing mix; set aside.
Combine all other ingredients in a large bowl.
Stir in half of the stuffing mix; toss to mix.
Spread vegetable mixture into a 9 x 13-inch baking pan.
Sprinkle the remaining half of the stuffing mixture on top.
Bake for 35 to 40 minutes.
