Dulce De Naranja(Orange Candy) - cooking recipe

Ingredients
    3 c. sugar
    1/4 c. boiling water
    1 c. evaporated milk
    1/4 tsp. salt
    1/2 c. chopped pecans
    1 Tbsp. grated orange peel
    1 tsp. grated lemon peel
Preparation
    In heavy saucepan over low heat, melt 1 cup sugar to a rich brown color.
    Blend in remaining 2 cups sugar, milk and salt. Bring to a boil; cook, covered, for 3 minutes.
    Reduce to low heat; cook, uncovered, without stirring to soft ball stage (230\u00b0 on candy thermometer).
    Cool without stirring to 110\u00b0.
    Fold in pecans and peels.
    Beat until creamy.
    Pour into buttered 8 x 8 x 2-inch pan.
    Cool; cut into squares.
    Makes 24 pieces.
