Dijon Chicken Salad - cooking recipe
Ingredients

4 c. cubed cooked chicken
1 c. sliced celery
1 c. seedless green grapes, halved
1 c. seedless red grapes, halved
1/4 c. chopped dried apricots
1/4 c. sliced green onions
3/4 c. mayonnaise
2 Tbsp. honey
1 Tbsp. Dijon mustard
1/2 tsp. salt
1/8 tsp. pepper
lettuce leaves
1/2 c. sliced almonds
Preparation

In a bowl, combine the first 6 ingredients. In a small bowl, combine the mayonnaise, honey, mustard, salt and pepper; mix well. Stir into chicken mixture. Cover and refrigerate until serving. Serve on a lettuce-lined plate. Sprinkle with the almonds. Yield: 6 servings.
