Rosy Relish - cooking recipe

Ingredients
    1 1/2 c. apple cider vinegar
    2 3/4 c. sugar
    1 Tbsp. salt
    1 (3-inch) stick cinnamon
    2 Tbsp. mustard seed
    8 whole cloves
    2 full c. ripe, chopped, peeled ripe tomatoes
    2 c. tart apples, peeled and chopped
    1 c. celery, chopped fine
    1 c. bell pepper (green), chopped
    2 Tbsp. hot red pepper, chopped (optional)
Preparation
    Combine vinegar, sugar, salt and seasonings and bring to rapid boil.
    Add fruit and vegetables.
    Simmer until fruit thickens and clear.
    Add few drops of red coloring.
    This takes quite a while and must be stirred often, especially towards the end or it will scorch and that ruins flavor.
    Makes 2 pints.
    Don't make more than two batches at a time.
    Put in hot, sterilized jars and seal.
