Black Bean Salad - cooking recipe

Ingredients
    1/2 lb. black beans (dry)
    1 (16 oz.) can whole kernel corn, drained
    6 scallions, sliced thin (include green tops)
    2 stalks celery, chopped fine
    1/2 bell pepper, chopped fine
    1/4 c. pickle relish
    1/2 tsp. cumin
    1 Tbsp. salad vinegar
    2 Tbsp. olive oil
    salt and pepper to taste
    1 c. cheese cubes (use sharp Cheddar or mix of cheeses)
Preparation
    Soak beans overnight; cook until just tender.
    Drain and cool. Add corn, scallions, celery, bell pepper, relish and cumin. Stir to mix thoroughly.
    Add vinegar, oil and salt and pepper; mix in.
    Add cheese last, mixing carefully to avoid breaking up cubes. Makes 6 servings of about 1 cup each.
