Spinach Omelet(A Green Vegetable Dish That My Husband Actually Likes) - cooking recipe
Ingredients

1/2 c. fresh or frozen cooked spinach, well drained
3 strips bacon, cooked crisp and crumbled
1/4 c. canned or 1/2 c. fresh mushrooms
dried herbs, salt and pepper to taste
1/4 c. grated cheese (Parmesan, Cheddar, Jack, or most any other)
3 eggs
Preparation

Whisk eggs with a little water until well mixed.
Heat 8 or 10-inch skillet; add a little bacon grease or butter and pour in eggs.
Lift edge of eggs as they are cooking and tilt pan to allow uncooked portion to flow underneath.
When eggs are set to your liking, arrange remaining ingredients over half of omelet.
Fold in half and cook briefly to heat filling and serve immediately.
