White Clam Sauce - cooking recipe
Ingredients

1/4 c. olive oil (vegetable is okay)
1/4 c. butter or margarine
1 or 2 large cloves garlic, minced
1/2 c. water
1/2 c. chopped parsley
1 tsp. salt (optional)
1/4 tsp. pepper
1/2 tsp. oregano
1 1/2 Tbsp. flour
2 (8 oz.) cans whole clams or 1 (7 oz.) can minced clams
Preparation

Heat oil and butter in skillet.
Add garlic; cook until lightly browned.
Cool slightly. Add water slowly.
Stir in parsley, salt, pepper and oregano. Blend flour with enough clam juice to make a smooth paste. Stir in. Add clams and clam
juice. Cook and stir over medium heat until slightly thickened.
Makes about 3 cups.
This is very rich so a little goes a long way.
