Lentil Salad * - cooking recipe

Ingredients
    1 lb. dried lentils
    3/4 c. olive oil
    1/4 c. wine vinegar
    3 shallots, minced
    4 tsp. prepared mustard
    1 Tbsp. lemon juice
    2 tsp. salt
    1/4 c. chopped parsley
    1 medium red onion, sliced
Preparation
    Put lentils in large kettle and cover with water 2 inches above bean level.
    Cover and simmer 40 minutes.
    Drain in colander and rinse in cold water.
    Combine next 7 ingredients.
    Add to cooled lentils.
    Then add parsley and onion slices as a garnish.
