Mustard Coated Rib Roast - cooking recipe

Ingredients
    1 1/2 Tbsp. paprika
    1 Tbsp. crushed black peppercorns
    1 Tbsp. coarse salt
    1 Tbsp. oregano
    1 Tbsp. thyme
    2 tsp. celery seed
    1 tsp. cayenne
    2 Tbsp. Dijon mustard
    2 Tbsp. grated onion
    2 garlic cloves, minced
    1 (4 1/2 lb.) bone-in rib roast
Preparation
    Mix first 7 ingredients.
    Mix mustard, onion and garlic in another bowl.
    Rub mustard mixture onto meat.
    Sprinkle with spice mixture.
    Cover and refrigerate overnight.
    Allow meat to stand 2 hours at room temperature.
    Roast at 350\u00b0 for about 45 minutes for medium.
    Let stand 10 minutes before slicing.
