Light Carob Truffles - cooking recipe

Ingredients
    1 c. part-skim Ricotta cheese
    1/4 c. honey
    1 tsp. vanilla extract
    1/2 c. coconut sugar, divided *
    1/4 c. carob chips (available in health food stores)
    2 Tbsp. butter
Preparation
    *Coconut sugar is made with 1 1/4 cups unsweetened flaked coconut.
    In a food processor, process coconut until the consistency of powdered sugar.
