Rice And Shrimp Casserole - cooking recipe
Ingredients

1 c. diced celery, sauteed until tender
2 Tbsp. margarine
3 c. hot cooked rice
2 c. shrimp or crab (can substitute chicken or tuna)
3 hard-boiled eggs, chopped
3 Tbsp. lemon juice
1/2 c. mayonnaise
1/2 can cream of celery soup
1 (3 oz.) can French fried onion rings
Preparation

Mix rice, sauteed celery, fish, eggs and lemon juice.
Fold in mayonnaise and soup and season to taste.
Turn into buttered casserole dish.
Top with onion rings or mix in as they tend to get too brown.
Can add them 5 minutes before finished.
Bake at 350\u00b0 for 20 to 25 minutes.
Serves 6.
