Carrot Cake - cooking recipe

Ingredients
    2 c. all-purpose flour
    2 c. sugar
    1 tsp. baking powder
    1 tsp. baking soda
    1 tsp. cinnamon
    3 c. finely shredded carrots
    1 c. cooking oil (may substitute applesauce)
    4 eggs
    1 (8 1/4 oz.) can undrained, crushed pineapple
    1/2 c. coconut
    1/2 c. raisins
    1/2 c. chopped nuts
Preparation
    In a bowl, combine flour, sugar, baking powder, baking soda and cinnamon. Add carrots, oil and eggs. Beat with electric mixer until combined. Add pineapple, coconut, raisins and nuts.
    Mix by hand. Pour into a 9 x 13-inch dish and bake at 350\u00b0 for 40 minutes.
    When cooled, frost with cream cheese frosting.
