Sharp Cheddar And Walnut Spread - cooking recipe

Ingredients
    1 pound sharp Cheddar cheese, cut into 1-inch cubes, at room temperature
    1/2 stick (4 Tbsp.) unsalted butter, softened
    1/4 cup sour cream
    1/8 tsp. Cayenne
    1/4 tsp. mace
    2 Tbsp. cooking wine
    1 cup chopped walnuts
Preparation
    Combine cheese, butter, sour cream, Cayenne, mace and cooking wine in the container of a food processor, and whirl until mixture is smooth and creamy.
    Scrape into a bowl. Stir in the nuts. Taste, and correct seasoning.
    Pack the spread into two 1 1/2 to 2 cup glazed crocks (onion soup bowls are nice for this). Cover tightly and refrigerate for two days or more before serving.
    To serve, let the spread soften slightly at room temperature.
    Yield: 3 cups.
