Gelato - Italian Ice Cream - cooking recipe

Ingredients
    2 c. water
    2 c. sugar
    pinch of salt
    1 c. lemon juice
    grated rind of 1 lemon
    2 egg whites
Preparation
    Mix together water, sugar and salt in a saucepan.
    Bring to a boil and cook over medium heat for 5 minutes.
    Add the lemon juice and rind to sugar mixture; let cool.
    Beat the egg whites until stiff and fold into the cooled lemon mixture.
    Pour into freezer trays, cover with plastic wrap and freeze until firm.
    Stir occasionally.
