Perfect Fried Chicken - cooking recipe

3/4 c. all-purpose flour
1 1/2 tsp. salt
1 1/2 tsp. paprika
1/4 tsp. pepper
1 (3 lb.) broiler-fryer, cut up
oil
Preparation

In a paper bag, combine the flour and seasonings. Add a few chicken pieces at a time and shake.
Remove the chicken to a plate and let the coating dry. In a skillet, heat 1/2-inch of oil. Lightly brown the meaty sides of the chicken first.
Lightly brown the other side. Reduce the heat and cover. Simmer for 30 minutes. Uncover for the last 10 minutes.
