Lemon Meringue Pie - cooking recipe
Ingredients

1 1/2 c. sugar
1/4 tsp. salt
6 Tbsp. cornstarch
1/2 c. cold water
1/2 c. fresh lemon juice
3 well beaten egg yolks
2 Tbsp. butter
1 1/2 c. boiling water
1 tsp. grated lemon peel
Preparation

Sift the first 3 ingredients into a 2 or 3-quart saucepan, then gradually blend in the cold water and lemon juice.
When smooth, add egg yolks and butter, blending thoroughly.
Stirring constantly, gradually add boiling water.
Bring mixture to a full boil, stirring gently.
As it begins to thicken, reduce heat and allow to simmer 1 minute.
Remove from heat and stir in 1 teaspoon grated lemon peel.
Pour into baked pie shell and cover with meringue.
